I love кисело мляко. It is difficult to translate this word in English and retain its full meaning. One can safely claim that кисело мляко is the basis of a healthy diet for Bulgarians and
especially for Bulgarian babies.
It is used in many recipes and has a strong presence as a snack and breakfast/ dinner
ingredient.
I have never quite felt comfortable with store-bought yogurt.So I decided to make my own.
It came out great and its taste is absolutely amazing. It is a world apart from the uniformly
blah-nd yogurt I get in the store. It is rich, sour, velvety smooth. You can cut it with a knife,
yet it has a light texture.

I got the milk delivered from a local farm dealer. I got unpasteurized. Why? Because it is the best and because the farmer I get it from specializes in a safe product. Because I love local and because it contains all its original fat. I can see tiny butter chunks on the crusty top of
my yogurt.
We have enough yogurt to last us awhile now. The baby loves it. It saved me about $15.00 in biweekly expenses.
I got the recipe from the amazing Dr. Fankhauser. It took me about a week to figure out how
to get raw milk in NYC.
And voila! Now I am in the business of homamade yogurt.
